My fondness for all things Scone Pony began innocently enough: I was sipping morning coffee on the front porch when our rental guests that week surprised me with a plate of freshly baked scones from the Scone Pony in Spring Lake, New Jersey.
It was love at first bite!
The father of the family, who so generously shared his score from the bakery, said he waited 45 minutes for his turn at the busy counter.
"The line went out the door and around the building," he said.
In peak summer season, a customer waiting line of this magnitude is not unusual, for good reason. The scones we savored from our guests — cranberry orange and blueberry lemon — were heavenly in every way. They were lightly glazed, with a moist and delightfully airy texture. Not too dry, not too crumbly, not too sweet.
